Crickets

From my professor, Grace Whittaker (Her friend Stephanie makes these)

Ingredients:

  • 1/2 pound crab (imitation or fresh, whatever floats your boat)
  • 1 package cream cheese
  • 1 large can whole jalapenos
  • 1 package bacon

Directions:

  1. Take 1/2 pound crab, add some cream cheese, and mix them together until the consistency looks right.
  2. Then take the jalapenos and slice them down the middle.
  3. Scoop out the seeds (with a spoon) and wash the jalapenos out under warm water. Pat dry.
  4. Put a scoop of the cream cheese mix inside each pepper.
  5. Cut bacon slices in half, otherwise they will be too long, and figure out how the bacon best fits around the jalapeno so you can secure it with a skewer through the middle of the jalapeno. It is best to soak the skewers before doing this, so they won't burn on the grill.
  6. Skewer the jalapenos and roast them in the grill.
