Aurora's Chile Lime Tofu

Ingredients:

  • 1 package firm tofu, cut into roughly 1 inch pieces
  • 1 fresh lime, juiced
  • 1 chile pepper (whatever I happen to have in the house), diced
  • 2-3 tablespoons honey
  • 2-3 cloves of garlic, diced
  • 1-2 tablespoons of olive or canola oil
  • 1 red bell pepper, chopped into small pieces

Directions:

  1. Heat oil in frying pan, add tofu and red bell pepper. Cook over medium-high heat until tofu is warm and lightly browned and pepper is getting tender. Stir frequently to keep from sticking.
  2. Add garlic and chile peppers, cook 2-3 minutes.
  3. While chile peppers and garlic are cooking, combine the juice of 1 lime and 2-3 tablespoons of honey by stirring rapidly with a fork.
  4. Turn heat down to warm or low, add lime juice and honey mixture to the pan. Cook about 1-2 minutes, stirring frequently.
  5. Serve over rice or in warmed tortillas.
